This study investigated the effect of NaNO2 on inhibiting myoglobin-mediated lipid oxidation in muscle using a washed bovine mince model. We measured various parameters, including TBARS and PV to determine oxidation, non-heme iron release, protoporphyrin destruction, nitrosylmyoglobin production.
